Can I exchange only one card, and can I take and return the same goods type? Official
No. An exchange takes and returns at least two cards. You cannot take a goods type from the market and return a card of that same type in the same exchange.

When I take one good and already have seven cards, do I discard one? Official
No. Taking one card replaces it from the deck, so your hand size does not change. The seven-card limit applies at the end of your turn.

May I discard cards voluntarily or temporarily exceed seven during an exchange? Official
You cannot discard cards just to reduce your hand. An exchange may temporarily put you above seven while you resolve it, but you must end the turn at seven cards or fewer.

What if the bonus pile for the sale size is empty? Official
You cannot take a bonus from another pile. The designer says that, when possible, consider selling one fewer card so the sale matches an available bonus pile; this situation is rare.

What happens if score, bonus-token count and goods-token count are all tied?
The printed rules stop after those two tie-breaks. The designer has not supplied a verified official ruling in the sources checked here, so the result is unresolved by the published rules.
